Ingredients:
3 1/2 cups all-purpose flour
4 whole eggs
1 egg yolk
1/4 cup extra-virgin olive oil
1/2 teaspoon kosher salt
1 to 2 tablespoons water or more if needed
Place flour in a pile on a clean, dry workspace. Create a well in the center of the flour pile that is about 7 inches wide (bigger is better). Crack all of the eggs and egg yolk into the well. Also, add olive oil, salt and 1 tablespoon (add 1 tbsp. to start, you can always add more if needed later) of water into the well. Carefully, with a fork, begin to beat the ingredients together inside the well. Take care to not let the walls of the well collapse. Do not worry about any lumps of flour, they will work themselves out. Continue to beat the ingredients together. Over time, the dough will begin to come together. This method slowly incorporates more and more flour from the walls of the well. It may look messy, but that is all part of the pasta making fun! When the dough starts to come together to become drier and tighter, start to knead the dough with your hands. If the dough becomes too dry, wet your hands and knead the dough with wet hands to add small amounts of water to the dough. Kneading the pasta dough is the most important part, so use your muscles! This is where that wonderful texture of fresh pasta is formed. Knead the dough until it becomes very smooth. When finished kneading, wrap the dough in plastic wrap and let rest for at least 1 hour.
Roll out pasta and cut to desired shape or run pasta through an electric pasta roller and cutter. When it's time to cook, add salt and 1 tablespoon of extra-virgin olive oil to a pot of water and bring to a boil. Add pasta. Pasta will float in the water. Cook for about 5-7 minutes. Enjoy with your favorite sauce!
